The functional dependence of linear response functions on correlation functions is regulated, for every equilibrium system, by the fluctuation-dissipation theorem. Although such a generality does not hold out of equilibrium, fluctuation-dissipation relations still encode basic universal properties of broad classes of systems. In particular, I will focus on the phase-ordering kinetics following a quench to an ordered phase, showing the robustness of the fluctuation-dissipation relation when specific details, as the topology of the lattice or the microscopic dynamical rule, are changed.
